cutting the cheese

i'm not a big
fan
of cheese, although partial
to mozzarella
on a
hot pie coming out of the oven
with pepperoni.
but i am curious
as to how and why
there are so 
many varieties of cheese
around the world.
every city
and state, country
seems to have their own
version
of a cheese ball.
all shapes and sizes,
colors,
and tastes.
i hear people say quite
often
that cheese is the one thing
they could never
forsake.
